Buckwheat Pancake Mix

1 cup mix
1 cup milk
1 egg
1 teaspoon oil
Mix ingredients together. Let stand 5 minutes. Test batter on hot pan. Adjust heat if necessary & start piling up the cakes for a real treat.

 

Pancake & Waffle Mix

1 cup mix
1 cup water or milk
1 teaspoon oil

Mix ingredients together. Let stand for 5 minutes. Test batter on hot pan. Adjust heat if necessary.

Old Southern Corn Bread

2 cups stone ground corn meal (yellow or white)
1 cup all purpose flour
½ cup sugar
1 teaspoon soda
1 teaspoon salt
3 tablespoons bacon drippings
2 eggs beaten
2 cups butter milk

Preheat oven to 400 degrees. Put several pieces of bacon in a 10" cast iron skillet and brown in oven. Meanwhile combine flour, cornmeal, & sugar mix well. Add drippings from bacon( leave about 2 tablespoons of drippings in skillet), buttermilk, & eggs to flour mixture stir well. Pour into hot skillet and bake in oven 35 to 45 minutes or until brown. Enjoy!

2 cups self rising cornmeal (yellow or white)
1 cup self rising flour
½ cup sugar

Stone Ground Corn Grits

4 cups water
1 Cup grits (yellow or white)
pinch of salt

After supper combine water and grits in sauce pan and let soak over night. In the morning bring water level up to the top of the grits add salt and cook 15 20 minutes or until tender.

Makes 4 to 6 servings.
